Pasta

Above all, pasta has to be a source of pleasure for eyes and palate. To allow this to happen, we've come up with a productive process centred on two main characteristics: bronze drawing and slow drying. Unlike industrial teflon, bronze drawing gives the pasta a coarse and porous surface allowing it to be cooked uniformly, since the water penetrates into the core of the pasta, endowing the pasta with an elevated capacity to let sauces and seasonings seep in. The slow, natural and low-temperature drying keeps the pasta from vitrifying on the outside, enhancing the coarse and porous drawing characteristics, maintaining its quality and taste. All of our tortiglioni or bow-tie pasta, our spaghetti or twirls are a concentration of pleasure, which we dedicate not only to connoisseurs, but to all those who can recognise and appreciate true values, linking us to the land, the traditions and the culture we're a part of.
