Marzolino is one of the highest quality Tuscan cheeses and has an antique tradition. Documents of the time tell us that when Caterina de' Medici went to France to be wedded to Henry II and become the Queen, she brought along "fine olive oil, beans and Marzolini cheese". In 1600, Cosimo de' Medici sent the Pope the gift of "Vinsanto and Marzolino cheese". Marzolino is a highly regarded specialty which is also produced mixing in small pieces of minced hot peppers or truffle. This cheese is excellent both at the beginning and end of a meal. It goes well with young red wines such as those from Montepulciano and Montalcino.
