Fresh pecorino (sheep's) cheese has an extremely delicate taste, a tender and buttery texture and a very thin rind. The inimitable taste that has made this cheese from Pienza and the Val d'Orcia famous is due to the quality of the pastures: the milk preserves the smell of the grass growing in the area.
