The Italian Saladini Knives thought by Alberto Marcomini
Scarperia is a small suburb of Mugello, known worldwide because it was capable of preserving a cutlery tradition going back a thousand years. Still today, small craft shops line the tiny narrow streets of the medieval village, forcing you to go back in time: usually when you enter, you find yourself peeping at the most classic craft shops where it seems that time has stopped forever.
This feeling goes on until you realise that actually their work is aided by machines run by electricity: but even who is inexpert understands perfectly that still today the biggest difference is in the capability of the craftsmen to use their hands. They have been passing on ability, and above all love, for generations, resulting in work requiring absolute precision and dedication. And there you find yourself holding hand-forged knives which are true works of art. And often they are unique pieces, in defiance of any type of "standardised" work organisation.
These are the reasons why I chose Saladini Cutlery first of all to have a dream of mine come true: to design and make knives specially thought of for cutting cheese. The result of months of drafts, tests and prototypes is this series which I find to be one of a kind, besides being incredibly elegant and functional.
